The gambler was betting by phone, so it's not like William Hills staff could'nt see the punter winning hand over fist for many months.
I think they tried to take the high stakes gambler on, due to the drop in profits bookmakers are seeing.

“We ran at a loss because we had a high roller who took us for £5m,” Chief-Boss-Man Ralph Topping said. This specific high roller’s wagering was not over a single event, it snow balled into days, weeks, and eventually months before William Hill took action. Under the advise of traders within the company, they eventually cut off all access to the account, and essentially said stop stealing our CASH. “We’ve effectively told him, ‘Enough is enough,” Mr Topping said.
